Hey, I'm Mera
The Loaf Coach
I'm a full-time working mom who needed sourdough to be simple. So I made it simple — for myself, and now for you.
How It Started
My sourdough journey didn't start with a trendy hobby or a pandemic baking phase. It started with my daughter.
She has a medical condition that requires antibiotics, and her nutritionist recommended foods that support gut health. The thing is — she loves bread. She loves baked goods. And sourdough, with its natural fermentation process, is one of the best, if not the best bread you can eat for your gut. The fermentation breaks down the phytic acid on the outer shell of wheat, making it significantly easier to digest.
So the mission was clear: start adding sourdough starter to everything I bake for her. Homemade sourdough bread instead of store-bought. Simple enough, right?
"I watched countless YouTube videos. Read an untold number of recipes and guides. And the amount of confusing, contradictory information out there was completely overwhelming."
Every recipe seemed to require waking up at 3 AM, babysitting dough for two or three days, and basically rearranging your entire life around a loaf of bread. That wasn't going to work. I'm a full-time working mom. I needed to give my daughter the gut health benefits of sourdough without becoming a full-time baker.
The Noise Is the Problem
If you've ever tried to learn sourdough online, you already know what I'm talking about. The information overload. The conflicting advice. The feeling that you need a chemistry degree just to bake a loaf of bread.
Here's what I discovered after wading through all of it: sourdough is actually quite simple. Yes, there are tons of things you can learn about it. But you don't need to know all of them to bake a delicious loaf. You can learn the basics, bake, and then continue to improve and grow from there. Make mistakes. Learn from them. Build your knowledge over time.
It's much more like climbing a staircase than trying to jump from the ground floor to the 10th story of a building.
From My Kitchen to Yours
Once I figured out a simple, practical approach, I started teaching friends and family. And something amazing happened — they were successfully baking on their first try. Without spending countless hours. Without the stress.
Every single person I taught was thrilled that they could put fresh-baked bread on their table without making a career out of it.
That's when I knew I wanted to help more people do the same thing — on a much bigger scale. Because the problem isn't that sourdough is hard. The problem is that it's been overcomplicated by all the noise out there.
So I became The Loaf Coach. Because I love making things simple through easy education.
A Little About Me
I was homeschooled by my Argentine mom and raised in Pasadena, California. I spent most of my career as a hairdresser — years of helping people feel confident and like the best version of themselves. These days I work remotely, and I'm a mom of two, wife, and dog mom to Jack, our Cavapoo.
Different career, same mission: helping you feel confident in what you're doing. Back then it was in the salon chair. Now it's in your kitchen.
This Isn't About Me. It's About You.
You're the one who's going to pull that perfect loaf out of the oven. You're the one who's going to put fresh bread on your family's table. I'm just here to show you that it's simpler than you think.
