Before You Bake

You need a sourdough starter

If you don't have one, ask a friend, buy one online, or make one from scratch (takes 1-2 weeks). Your starter should reliably double in 4-6 hours before you bake with it.

Get a kitchen scale

Baking by weight is the single most important thing you can do for consistent results. A $25 scale will change your baking life.

Watch the dough, not the clock

Every kitchen is different. Your dough at 72°F will behave differently than at 68°F. The recipe gives time estimates, but your dough knows best.

Your first loaf won't be perfect, and that's the point

Every bake teaches you something. Take notes, make adjustments, and enjoy the process. The bread will still taste amazing.
